With last weeks rain, everything is just exploding. I swear, I can sit and watch the garden grow right before my eyes. My latest morning ritual: juicing the garden! Check out that gorgeous Romaine Lettuce up top.

CrockPot Green Bean Casserole



Day 161.

Its day 2 of Retro Week!

That is not a picture of dog barf. Its green bean casserole. Ive never actually had green bean casserole. Its on the table, lots, during the holidays, and Im sure Ive put some on my plate, but I dont actually eat it.

I dont like canned green beans. My grandma makes a 3-bean salad that uses canned green beans, and I like that. But thats it.

I kind of could go on and on about why I find canned green beans icky. But Im not going to, because they are staple in a lot of homes, and I should be nice.

Canned green beans are not my cup of tea.

I really like fresh green beans, though, and in honor of Retro Week decided to make a new-and-improved green bean casserole. In the crockpot.


The Ingredients.

--1 lb fresh green beans
--2 cups homemade cream of mushroom soup.
--1 cup General Mills Rice Chex cereal (make sure the label is marked Gluten Free if you are gluten free. There are still some old boxes on shelves)
--1/2 t onion powder
--1/3 cup shredded parmesan cheese

if you would like the recipe using the canned cream of mushroom soup, it is here. This recipe calls for 4 cups of cooked green beans. Since youre going to be using your crock, the fresh will cook nicely, and you can put in raw beans.


The Directions.

Wash and trim the green beans. If you feel the need to cut the green beans so they are all the same length, go for it, but they will cook fine left uneven.

Add the frozen soup, or canned soup and the milk that the canned soup version asks for. Mix the green beans with the liquid.

Put the rice chex in a ziploc and smash to desired crumbiness. Add the onion powder and the parmesan to the bag, and shake to mix.

Pour evenly over the top of the beans.

Cover and cook on low for 4-6 hours, or on high for 2-3.


The Verdict.

I liked this much better than the canned green bean casserole. The green beans still had a crunch, even after being slow-cooked. The topping wasnt as crisp as it would have been if I had used the frenchs fried onions, but the flavor was there, and the cheese added a nice salty flavor. The homemade cream of mushroom rocks, and was quite flavorful.

The brown chunks of mushroom were really unnerving, though. It felt like we were eating dog food. Or puked-up dog food.

But it tasted good. I dont know what to think of this. It worked, it tasted good, and if you like green bean casserole, youd probably like it. I think I like lightly steamed green beans better with a squeeze of lemon. or stir-fried with some chili oil. or baked with salmon. or in a stew.

5 Simple Ways To Get Your Green On

You know what they say: Everyones Irish on St. Patricks Day. Ive had my quota of green beer for this lifetime, thank you, but lets see if we all cant add a wee bit o green to our lives, starting today.

Curb your junk mail. Reduce mailbox clutter and help save natural resources. Pull out the pre-paid stamped envelope in your junk mail, write “PLEASE REMOVE” on the envelope and send it back to them. They don’t have to pay for future mailings and youre not buried in piles of junk mail. You can also visit Catalog Choice and choose which catalogs you no longer wish to receive. Most companies provide online catalogs. Go paperless.

Eat local. Grow your own food. Small yard or no yard? Not to worry. Look into square foot gardening and container gardening. You may even be able to get several crops of a quick-maturing vegetable. Have a window? Great. Get a window box and grow some lettuce and herbs. Lunch is just a snip away. Support your local farmers, natural food stores and food co-ops too.

Compost. Its a critical step in reducing the amount of garbage needlessly sent to landfills. Recycle your kitchen waste. Save those apple cores, banana peels and other organic waste. Its an excellent way to enrich your gardens soil. Watch your houseplants thrive too.

Buy certified organic food, free of hormones, antibiotics, artificial ingredients, toxic pesticides, herbicides and fertilizers. If it comes down to budget — and who isnt conscious of spending these days — at least check out the Dirty Dozen fruits and veggies compiled by the Environmental Working Group. A childs developing brain and endocrine system is especially sensitive to the damaging effects of toxic chemicals, so at the very least, buy organic for your children.

Coffee, tea, chocolate, bananas, mangoes and pineapples are common Fair Trade products. Search here for a list of products that are Fair Trade Certified™.

Clean Green Celery Soup

2 to 4 stalks celery, chopped and divided
1 avocado, chopped
½ cucumber, chopped
½ to 1 C water
juice of ½ a lime or lemon
handful of cilantro
sea salt or kelp flakes to taste
freshly ground black pepper to taste
celery leaves to garnish

Put half the celery into a bowl. Place the remaining celery along with the next five ingredients into a blender and blend until smooth. Pour contents into the bowl. Season to taste. Don’t forget to garnish with celery leaves!

Red and Green Christmas Rice with Bell Peppers Parmesan and Pine Nuts and Happy Holidays!

I want to share one more recipe before I take most of next week off the enjoy the holidays with my family, and if you're making any kind of formal dinner this week, I recommend this Christmas Rice with Bell Peppers, Parmesan, and Pine Nuts as the perfect holiday side dish.  The rice is loaded with flavor from red and green peppers, thinly sliced green onions, Parmesan, pine nuts, and just the right seasonings.  It cooks in the oven (along with your main dish if you'd like) and doesn't require much watching.   And of course it's red and green, which is always fun for this time of year.   And before I talk more about the recipe, let me wish all my readers and friends a great holiday season, plenty of time with those you love, and lots of delicious food in 2013!

I loved the unique combination of flavors in this Green Bean Summer Salad with Sausage, Olives, and Basil Vinaigrette!

Sometimes I think outside the box a little when I'm staring into the fridge wondering what to make with what I have on hand, and that's what happened with this Green Bean Summer Salad with Italian Sausage, Olives, and Basil Vinaigrette.  I don't really know what made me combine these flavors, except I had fresh green beans and turkey Italian sausage that needed to be used, and I think olives and basil vinaigrette would taste good with just about anything.  All I can say is, it worked.  I'm calling this a "summer" salad because I wouldn't make this unless I had fresh green beans, but if you like all these flavors, be open minded and give this a try!

I'm a big fan of taco salad, so recently when my niece and cooking assistant Kara was doing the Whole 30 challenge, I thought it would be fun to come up with a taco salad that's Whole 30 approved.  I also wanted a taco salad that didn't have beef, and this delicious Green Chile Turkey Taco Salad with Peppers and Avocado is the combination we came up with.   Simmering the meat with green chile salsa and other seasonings, using a little of the same salsa to add flavor to the dressing, plus adding green and red bell peppers and finely chopped fresh Poblano chiles to the salad greens gives this salad a lot of savory chile flavor with just a little heat.  Kara and I both loved the flavor of this turkey taco meat mixture; if you have family members who don't want salad it would be delicious inside tortillas for regular tacos as well.

Tuna and Macaroni Salad Recipe with Dill Pickles Capers and Green Onions

It's the dressing of mayo mixed with the tuna oil, lemon juice, pickle juice, and Spike Seasoning that makes this Tuna and Macaroni Salad so spectacular!

This Tuna and Macaroni Salad Recipe with Dill Pickles, Capers, and Green Onions is something I came up with one day when I was hungry and wanted to cook with pantry ingredients.  I usually take photos and write down the recipe when I'm experimenting in the kitchen, but even though I did that, I wasn't sure I would post this recipe, because after all, does the world really need another recipe for Tuna and Macaroni Salad?  Then I noticed that all day after I made this I kept going back to the fridge to get a little more of the salad, and the next day when my nephew Jake came over he ate a big bowl full, and I decided this tuna and macaroni salad was really pretty fabulous.  Flavor additions here include a generous amount of chopped dill pickles, capers, and green onions, but I think it's the dressing that's a mixture of mayo, olive oil drained from the tuna, lemon juice, dill pickle juice, and Spike Seasoning that makes this salad so spectacular.

I promised one more idea for a red-and-green dish to celebrate the holidays, but Southwestern Stuffed Peppers with Black Beans and Green Chiles will make a delicious dinner any time of year.  This recipe uses my favorite techniques for stuffed peppers.  First, I start with raw peppers so they aren't too soft by the time the filling cooks.  Second, I trim the bottom ends of the peppers flat so they stand up in the dish.  Third, I chop the trimmed parts to add more pepper flavor to the filling, which in this recipe includes black beans, diced green chiles, cooked rice, tomatoes, and grated cheese.
