Creamy White Bean and Apple Chili


Day 254.

I know. Another savory dish with fruit. I cant help myself. Im determined to make fruit an okay part of dinner after the gingered peaches with chicken. Which I cant even type without shuddering.

I did not like it in a box. Or with a fox.

But anyhow, we are hitting apple season, and apple season brings lots of apples.

That it does.

This is a creamy, lightish chili that doesnt taste at all like there is fruit in there. The apples completely disappear.

I dont know if Im really selling this...

This is a good approaching-fall chili. It is not too heavy, but it isnt so light that you walk away from the table hungry.

The Ingredients.

--2 cans of white beans, drained and rinsed (I used white kidneys)
--1 onion, chopped
--2 apples, cut in tiny chunks, no need to peel
--3 cloves smashed and chopped garlic
--3 T butter. Yes, butter.
--2 tsp chili powder
--1/2 tsp ground thyme
--1 tsp cumin
--1/4 tsp salt
--1/4 tsp pepper
--3 cups chicken broth (unless you are vegetarian. then you should use vegetable broth. because the chicken would be wrong.)
--1/2 cup plain non fat yogurt
--1/2 cup shredded sharp cheddar cheese (optional)

The Directions.

Any crockpot over 4 quarts would work well with this dish.

Put the butter into the bottom of your crockpot. Dump in the drained and rinsed beans. Chop up the onion and the apple. Add the spices, and pour in the broth. Stir in the yogurt.

Cover and cook on low for 8 hours, or on high for 4-5. This is done when the onion has reached desired tenderness and the flavors have melded. Stir in the cheddar cheese before serving.

I think corn bread would be awesome with this dinner. I wish I would have thought of it before just this second.

The Verdict.

This is a good meal. The chili is quite mild---you might want to sprinkle some Tobasco on top, or add more chili powder if you want a kick. This was mild enough for the kids to eat.

I was pleased with both the tang and the creamy consistency the non fat yogurt provided. It didnt separate, and added a nice level of creaminess.

(Updated with new photos and better instructions, April 2013.)  Back in 2005 when I first started blogging, one of the first bloggers I "met" online was Ilva from Tuscany, who writes the beautiful blog called Lucillian Delights.  This recipe from 2007 was inspired by the White Beans and Sausages with Tomatoes and Sage that Ilva posted, and since she's in San Francisco this weekend speaking at the IACP Conference, I thought it would be a fun time to update this recipe with better photos.  I was sad that the timing of the conference came right after my move so I couldn't make the budget stretch to go meet Ilva in person, but I was definitely thinking about her as I enjoyed this delicious Italian Sausage and White Beans with Sage!

White Bean Salad Recipe with Tuna and Parsley

This White Bean Salad with Tuna and Parsley has been a summer favorite for years!

In the early days of my blog I discovered a delicious and affordable brand of Tuna Packed in Olive Oil, which changed my way of thinking about canned tuna forever.   That tuna plus my love of parsley and lemon inspired my version of this classic tuna and white bean salad and it's turned into a favorite lunch that I've made over and over.   I updated the photo for this recipe in the summer of 2011, when I had plenty of fresh parsley from the garden, but parsley is an herb that's available and inexpensive all year from the grocery store, and I love that this salad uses ingredients I always have on hand.

Recipe Southwestern Chicken and White Bean Soup


I am sharing this recipe from Cooking Light. It will be sure to warm you up on a chilly evening and it only contains five ingredients!

Ingredients:
2 cups shredded cooked Chicken breast
1 tablespoon taco seasoning
Cooking spray
2 (14-ounce) cans fat-free, reduced sodium chicken broth
1 (16-ounce) can cannellini beans or any other white beans, rinsed and drained
1/2 cup green salsa
Light sour cream, optional

Directions:
1. Combine chicken and taco seasoning; toss well to coat. Heat a large saucepan over medium-high heat. Coat pan with cooking spray. Add chicken and cook for 2 minutes until chicken is lightly browned. Add broth.
2. Place beans in a small bowl and mash until only a few whole beans remain. Add beans and salsa to the pan with the chicken. Bring to a boil. Reduce heat and simmer for 10 minutes. Serve with sour cream, if desired.

Good News! Trader Joes Now Offers White Whole Wheat Flour Heres How It Measures Up

For years Ive been baking with King Arthurs White Whole Wheat Flour. This type of flour is milled from hard white spring wheat instead of traditional red wheat. The beauty of white whole wheat is that it is delicate like white flour (in fact you wouldnt know youre eating whole wheat!) AND it has the fiber and other nutritional benefits of whole grain. Unfortunately King Arthur is sometimes hard to find and is twice the price as conventional all-purpose flour.

A few weeks ago I noticed that Trader Joes had their own brand of white whole wheat flour, "Baker Josefs",  so I picked one up to try. Im excited to report that it bakes as well as King Arthurs. Heres how else it compares:

Price
A 5-pound bag of King Arthurs white whole wheat flour costs $4.95. If you buy King Arthurs organic white whole wheat flour, it costs $7.95. 
Trader Joes Baker Josefs white whole wheat flour costs $2.99 for a 5-pound bag. Unfortunately, organic is not available.

Nutritional Content in 1 Cup of Flour
* White, all-purpose flour has 455 calories, 4 g of fat, 13 g of protein, 95 g of carbohydrates and only 3 g of dietary  fiber.

* King Arthurs white whole wheat flour has 400 calories, 2 g of fat, 12 g of protein, 72 g carbs and 12 g of dietary fiber.

* Baker Josefs white whole wheat flour has 440 calories, 2 g of fat, 16 g of protein, 92 g carbohydrates and a whopping 16 g of dietary fiber!

Bottom line, Baker Josef costs about the same as conventional all-purpose white flour and is 40% cheaper than King Arthurs white whole wheat.

Baker Josef has 23% more protein than all-purpose white flour and has 33% more protein than King Arthurss white whole wheat.

Baker Josef has 433% more dietary fiber than all-purpose white flour and 33% more than King Arthurs. 

Remember, dietary fiber from whole grains can keep your regular and may lower your risk of colorectal cancer.  Fiber also lowers cholesterol and helps control your blood sugar levels. 

If theres a Trader Joes near you, I suggest you give Baker Josefs white whole wheat flour a try, especially if you are still using white flour. If you use and enjoy King Arthur, its still a great product and a great choice. Trader Joes is just giving us another option.

Baking with White Whole Wheat
White whole wheat flour bakes like white flour. Start out by substituting it for 1/4 or 1/2  of your white flour but eventually Im sure youll use it for the entire recipe. It absorbs a bit more moisture than white flour so add a little more liquid to your recipes. All of my baked recipes on the blog (except for those that are wheat-free) assume the use of white whole wheat flour so theres no need to add additional liquid to these. 

White whole wheat flour can be used for bread, pizza dough, pancakes, muffins, breading, stuffing, biscuits, to thicken gravy or anywhere else white flour is used. I promise you, your kids wont even know you snuck in all this fiber and nutritional goodness into their diets!
