(For Phase One Fridays I feature Phase One Recipes from the past that have been my personal favorites, and this recipe for World's Easiest Grilled Zucchini and Sausage Kabobs is something I've made over and over with beef, chicken, or turkey sausage.)
It's time to be breaking out the grill, and unless you're brand new to my blog, it's probably pretty obvious that I love grilling. But some nights you just want an easy dinner, so I hope you enjoy this updated recipe for kabobs that I've used many times with different types of sausage, and truly, these have to be the easiest kabobs in the world. There are a few ways you can do the kabobs, depending on how much time you want to invest, but even if you just stick the sausage and veggies on skewers, brush with Italian salad dressing, and grill, this is a pretty good tasting easy dinner.

Recipe for Three Cheese Zucchini Frittata with Mozzarella Feta and Parmesan
![]() |
| Three Cheese Zucchini Frittata can use those monster zucchinis that suddenly appear in the fall garden. |
I mentioned last week how I love the idea of Sneak Some Zucchini on to Your Neighbor's Porch Day, but I am puzzled as to why the holiday comes so early in the gardening season. In Utah, zucchini grows at least until the end of September, and those last few weeks of the summer are when you're most likely to wander out to the garden and find a giant zucchini staring you in the face. For a few weeks now I've been experimenting with the monster zucchini a good friend has been giving me, and this Three Cheese Zucchini Frittata was one of the happy results. Besides using Mozzarella, Feta, and Parmesan cheese, I have a couple of other tricks here that made this one of the best tasting zucchini + egg dishes I've ever had.

![]() |
| If you have a surplus of zucchini, these 50 Amazing Zucchini Recipes can help you use it up! |
(Originally posted with 20 Zucchini Recipes; updated with more favorites in August 2013.) It may not be an official government holiday, but gardeners everywhere celebrate August 8 as Sneak Some Zucchini on to Your Neighbor's Porch Day. Several years ago I did a zucchini round-up in honor of the day, but since then I've made so many more recipes with zucchini that I decided to give that post a make-over and update it with some of my new favorites. You still have a few more days before you need to start sneaking the zucchini on to the neighbor's porch, so maybe these recipes can help, or at least you can leave the neighbors a recipe idea along with that zucchini! I've divided the recipes into categories this time to help you find something you'll like. There are lots of other bloggers who have good zucchini recipes too, so after my list I'll share a few links to other places to find them. Enjoy!

Raw Zucchini Soup topped with Raw Goat Milk Feta

Its the middle of the summer and my garden is flourishing but its hot and I dont want to cook anything thats going to heat up the kitchen. What a perfect time to prepare raw food! I must admit, when I posted a "one month raw cleanse" in May, it was still cold in many parts of the country. Cold weather makes people think of hot soup, not raw food. But in July, its just perfect. Especially when a recipe takes minutes to prepare like this one does.
Cheese on a Raw Food Diet?
When I was visiting Redwood Hill Farm last week, (check out my post on July 16th), David Bice told me about their "raw goat milk feta". This cheese is made from raw goat milk and aged 60 days. It is never heated above 115 degrees so it retains it vital enzymes. A small amount of raw goat cheese in a raw diet can be beneficial since its a source of vitamin B12, a vitamin that vital to your health and impossible to get from a 100% raw food vegan diet. And, did I tell you how delicate and delicious it is?
Nutrients in Summer Squash
Zucchini, and all summer squash, is rich in vitamins A, C, K and the B vitamins B1 (thiamine), B2 (riboflavin), B3 (niacin), B6 (pyridoxine) and folate. It provides important minerals like manganese, magnesium, potassium, copper, phosphorus, calcium, zinc and iron and contains some omega 3 fatty acids. Together with the other healthy ingredients, this soup is a good source of protein and fiber, yet low in calories, saturated fat and cholesterol.
