A Foodies Best Friend Recipes Galore!

Recipes, kitchen gadgets and beautiful food photos are a foodies drug of choice. And this week, I feel like I discovered an opium den.

I had the good fortune Wednesday of being chosen as the Food Blog of the Day on Foodista. If, like me, youve never explored this online "Cooking Encyclopedia," youre in for a real treat.

South Beach Diet Phase One Recipes Round up for May 2014 and an announcement

Kalyn's Phase One Recipe Picks for May 2014 were Baked White Fish with Onions, Peppers, Olives, and Feta, Stir-Fried Broccolini with Oyster Sauce, Fried Cauliflower Rice with Shrimp, Sugar Snap Peas, and Red Pepper, Shrimp and Black Bean Salad with Cilantro, Cumin, and Lime, and Baked Eggs and Asparagus with Parmesan.

It's summer, and if I needed a reminder I got a good one when I looked at the bookmarks where I save recipe links to feature here every month and realized I didn't have one single soup, stew, or chili recipe this time.  I like a good bowl of soup as well as the next person, but I couldn't be happier to say bring on the salads! But before we get to the food, I want to talk a little about these round-ups.

This post makes 74 months of writing monthly South Beach Diet Phase One Recipes Round-Ups for the blog, and times have changed.  I still love the South Beach Diet, but now a lot of people reading my blog follow other types of low-carb or grain-free eating plans.  (That was the reason I gave the blog a makeover last year, adding new tabs so recipes could be sorted by diet type.)  After asking for opinions on Facebook and giving it a lot of thought, I've decided to make the monthly round-ups more broadly focused, hopefully making them more useful for people who aren't strictly following South Beach. I'll still include recipes that are South Beach Diet Phase One of course, but I also want to spotlight interesting recipes that are Low-Carb in general, Paleo, Whole 30, and possibly others. As always, all the recipes in the round-up will be grain-free, making them Gluten-Free as well, and there will be some type of labeling system to make it easy to see which recipes are Phase One or another plan. That new format will be coming next month; hope you like it. And if you have any thoughts about this, please share them in the comments!

Kalyn's Kitchen is Nine Years Old!

Nine years ago I wrote my first unsophisticated little post on Kalyn's Kitchen, and now each year when this anniversary date comes around, I realize again how I never dreamed all the ways this little blog would change my life. I'll always be grateful to my brother Rand for starting me down the path to a second career as a full-time blogger, and to the fellow food bloggers who have shared their knowledge and helped me expand my skills.  I also want to send thanks to my long-time web designer Jennette who keeps my blogs running smoothly and makes me look good despite my limited technological knowledge!

One thing I've enjoyed greatly over the past nine years is how blogging has brought so many interesting, thoughtful, and creative people into my life.  Nowdays Facebook, Twitter, Google+, Instagram, and Pinterest make it easier to connect with readers and fellow bloggers than in the early days, but things can also get lost in the noise of social media and I always appreciate people who make the extra effort to leave a comment on the blog or send me an e-mail.  And blogging wouldn't be much fun at all if no one was reading and interacting, so let me say a big thank you to all my readers, family members, and friends for your support through the years!

South Beach Diet Phase One Recipes Round Up for October 2013 Low Glycemic Recipes

Kalyn's favorite Phase One Recipes for October 2013 were Greek Salad Spaghetti Squash Bowl,  Slow Cooker Chickpea Stew, Chicken Paprikash, and Turkey and Black Bean Mexican Cabbage Bowl.

It's time for the monthly Round-Up of South Beach Diet Phase One Recipes that I've posted during the previous month or spotted on other food blogs.  You can tell it's Fall by scrolling through these recipes; I spotted lots more soups and not many salads, and cauliflower seems to be Veggie of the Month for October.  I doubt many people start a diet in November, so I hope it doesn't seem cruel to draw attention to Phase One when everyone's thinking about Thanksgiving Recipes.  But in January when you're looking for food that's a bit lighter and lower in carbs, you might enjoy looking back through my Low-Glycemic Recipe Round-Ups like this one! (And for those who try to stick to a low-glycemic eating plan even during the holidays, more power to you!  I do my best, but it's hard this time of year.)

I love to write round-up posts spotlighting my favorite recipes, but the dilemma with food blogging is that every year you have more recipes that end up being favorites.  That's why I'm adding the plus sign to the title of this post, so I can feature 25+ recipes and include a few new recipes from 2014 on this list.  I know you don't have leftover turkey yet, but I have 24 people coming for dinner tomorrow and there are already family members staying at my house so I want to get this posted before I get too busy making food!  (And than I'll be taking a few days off here to spend time with my family; here are all the Carb-Conscious Thanksgiving Recipes in case you still need them!)

This year, and every year  I love the idea of a holiday dedicated to feeling gratitude, something I try to focus on every day.  And without turning this into a long list of all the things I'm thankful for, let me acknowledge how much I feel blessed to have a life filled with family, friends, interesting work, and all the cooking tools any food obsessed person could ever want!

Weight Loss Recipes Healthy Chicken Tortilla Soup

Healthy Chicken Tortilla Soup

  • Start to Finish: Less than 2 hours

Ingredients:


  • 3 4-ounce boneless skinless chicken breasts
  • Salt
  • 1 teaspoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chopped cherry or grape tomatoes
  • 2 carrots, chopped
  • 1 green bell pepper, chopped
  • 1 jalapeño pepper, chopped
  • 1 tablespoon chili powder
  • 1 1/2 teaspoon cumin
  • 1/2 teaspoon pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 4 cups low-sodium chicken broth
  • 2 cups frozen corn
  • 1 can (15 ounces) black beans, rinsed and drained
  • 3/4 cup fresh cilantro, divided
  • 1 cup 2% shredded Mexican cheese blend, for garnish
  • 4 whole-wheat tortillas, for garnish
  • 1 lime, cut into wedges, for garnish


Directions:


1. Arrange chicken in a single layer in a large pot and cover with about 1 inch water. Sprinkle in a few pinches salt. Place on medium-high heat and bring to a boil. Cover and reduce heat to medium-low, simmering for 10 to 15 minutes until internal temperature in thickest part of chicken reaches 165 degrees. (Or cut into thickest part of chicken and if still pink, continue cooking for 10 minutes.) Transfer chicken to a large bowl or cutting board and shred with two forks.
2. Heat oil over medium heat in a large pot. Add onions and garlic, and cook until translucent, about 5 to 8 minutes.
3. Meanwhile add tomatoes, carrots, green pepper, and jalapeno to a blender or food processor and mix until blended but still chunky.
4. Once onions are done, add spices and 1 teaspoon salt to the pot and cook for 1 minute. Add shredded chicken, tomato mixture, chicken broth, corn, beans, and 1/2 cup cilantro. Add 1 cup water if soup is too thick for your taste. Simmer, partly covered, until thoroughly heated and corn is tender, about 30 minutes or up to 1 hour to allow flavors to develop. Add more salt if necessary.
5. When soup is ready, brown tortillas on a baking sheet under a broiler for 1 to 3 minutes. Let cool and break into strips. Garnish soup with tortilla strips, cheese, remaining cilantro, and 1 squeeze fresh lime juice.

Weight Loss Recipes Black Eyed Pea and Collard Greens Soup

Black-Eyed Pea and Collard Greens Soup

  • Start to Finish: 45 minutes

Ingredients:


  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 3 medium red potatoes, chopped
  • 1 medium yam, chopped
  • 3 cups (one bunch) chopped collard greens, stems removed
  • 3 cups cooked black-eyed peas
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 4 cups vegetable stock
  • 1 tablespoon apple cider vinegar
  • 1 dash sea salt
  • 1 dash freshly ground black pepper


Directions:


Pour olive oil into a pot over medium heat. Add onions and garlic, and saute until onions are translucent, about 5 minutes. Add carrots, potatoes, yam, collards, black-eyed peas, basil, oregano, and vegetable stock. Turn heat to high and bring to a boil. Cover, reduce heat, and simmer for 20 to 25 minutes until vegetables are tender. Stir in apple cider vinegar, and season with salt and pepper to taste.

Sugar Free Miniature Whole Grain Corn Muffins with Stevia Vegetarian and Vegan Recipes


This recipe makes 9 to 12 large or 24 miniature muffins.

Stevia is a natural herb and a safe replacement for sugar.

This recipe fills 2 miniature muffin pans.

Perfect size to accompany a large Thanksgiving feast.


How to Save Calories on Thanksgiving or Other Multi-Course Meals
Although no one needs bread on Thanksgiving with all of other dishes, we often feel compelled to serve it. One way to prevent over-eating these treasured carbs is to serve them in a "miniature" package. In this recipe, I use miniature muffin tins which allows me to get 24 muffins out of same amount of batter than yields only 9 to 12 regular sized muffins. If you put a large muffin on your plate youll probably eat it even if youre busting at the seams. If you put a miniature muffin on your plate, youll get the joy of having some extra carbs with only a fraction of the damage. Most likely, you wont go back for more.

Making Sugar Free Muffins with Stevia Instead of Sugar
Stevia is an herb which has been used to sweeten beverages in Paraguay and Brazil since pre-Columbian times. Its popular in many parts of the world but has been kept a "secret" in this country, in my opinion, by the artificial sweetener and sugar lobbyists. It wasnt until recently that the FDA granted GRAS approval to stevia so that it can be used in "food and beverages" and not just as a "supplement" for which it was previously approved. With its popularity around the world, it has been used in large quantities for many years and has been shown to be completely non-toxic unlike many artificial sweeteners on the market.
When baking with stevia, you do not have the "volume" that you get when using sugar. In this recipe, I replace 1/4 cup of sugar with 6 (1 gram) packets of stevia, 2 tablespoons of applesauce and 2 tablespoons of oat bran. The applesauce and oat bran make up the missing volume nicely.

Fiber Fiber Fiber
As my blog readers know, I think fiber consumption is one of the most important things you can do for health and longevity. This recipe is made with "King Arthur White Whole Wheat Flour" which gives you the delicate mild flavor and light color of white flour but all of the fiber and nutrition of whole wheat. I also use whole grain cornmeal which, I must admit, gives you a very grainy texture. If you dont like the texture of whole grain cornmeal, you can substitute degermed cornmeal but you will not get as much fiber. Try the whole grain cornmeal and see what you think.

Sugar Free Vegetarian Miniature Whole Grain Corn Muffins
[makes 24 miniature muffins]
1 cup white whole wheat flour (or all purpose flour)
1 cup whole grain cornmeal (or degermed cornmeal)
3 teaspoons aluminum free baking powder
1/2 teaspoon sea salt
6 (1 gram) packets stevia extract
2 tablespoons oat bran
2 tablespoons unsweetened applesauce
4 tablespoons virgin olive oil
1 organic, cage free, omega 3 egg, beaten
1 cup 1% organic low fat milk

Preheat oven to 425 degrees. Grease 2 miniature muffin pans that hold 12 muffins each. Place all ingredients in a mixing bowl and blend. Divide batter into 24 miniature muffin tins and bake for 9 minutes or until an inserted toothpick comes out clean. You can also make 9 to 12 large muffins but they will have to cook a little longer, about 12 to 15 minutes. You can also put the batter into an 8 inch square pan and bake 20 to 25 minutes.

Per miniature muffin: 63.9 calories, 2.8 g fat, 0.5 g saturated fat, 9.3 mg cholesterol, 1.8 g protein, 7.9 g carbohydrates and 1 g of fiber.

[makes 24 miniature muffins]
1 cup white whole wheat flour (or all purpose flour)
1 cup whole grain cornmeal (or degermed cornmeal)
3 teaspoons aluminum free baking powder
1/2 teaspoon sea salt
6 (1 gram) packets stevia extract
2 tablespoons oat bran
2 tablespoons unsweetened applesauce
4 tablespoons virgin olive oil
1 1/2 teaspoons EnerG mixed thoroughly in 2 tablespoons warm water
1 cup organic soy milk


Preheat oven to 425 degrees. Grease 2 miniature muffin pans that hold 12 muffins each. Place all ingredients in a mixing bowl and blend. Divide batter into 24 miniature muffin tins and bake for 9 minutes or until an inserted toothpick comes out clean. You can also make 9 to 12 large muffins but they will have to cook a little longer, about 12 to 15 minutes. You can also put the batter into an 8 inch square pan and bake 20 to 25 minutes. When using EnerG egg replacement, bake the muffins immediately after preparing the batter. If they sit around a while, they may not rise properly.

Per miniature muffin: 60.5 calories, 2.7 g fat, 0.4 g saturated fat, 0 mg cholesterol, 1.5 g protein, 7.5 g carbohydrates and 1 g of fiber.
