Low Carb High Fat Diet Breakfast recipe


So I reached the part of my diet where I need to maximize the amount of fat Im eating, so I thought Id share what Ive been eating.

Im no masterchef but I realize Im not the only one, so this is for people looking for something simple.


So what we have here is:
  • 3 egg omlette 
  • 68g salami 
  • 60g cheddar cheese 
  • 25g butter
  • 12g Boursin cheese
  • 2 tbl spoons Heavy Cream 
Obviously you can use different cheese and meat, but it needs to be fatty.  Butter tends to be at least 80% fat so is good to use in everything.  I estimated this meal to be 754 calories.

To make this I first cooked the eggs then added the topping and placed in under the grill to melt the cheese.

I forgot to take a picture of the finished product so here is another one I made the next day with the salami diced.

It stands in clear contrast to the emphasis that most of todays society places on uniformity and conformity in relation to body image. In doing so, it allows people who have never been able to lose weight in the past to achieve powerful breakthroughs and to reach their goals.

The contrasting idea of fat acceptance is shame. Fat shaming is the product of the sometimes quiet, and sometimes thunderous, wave of messages from society that state very clearly that being overweight is not okay. It poses the following question, which has shaped how millions of people have come to think about themselves: How can a man or a woman be accepting of their body when it falls so far outside of societys vision of the ideal form?

The answer to this question lies within the possibility that exists in the realm of acceptance. Acceptance, not rejection, is they key that unlocks the possibility of making the changes necessary to address our nations obesity epidemic. In my experience, it is those who accept their weight and deal with it powerfully who achieve the most profound and lasting weight loss results.

How We Relate to Ourselves Matters

Language is both how we communicate with the world around us, as well as the way that we communicate with ourselves. In this way, the language that we use to describe ourselves becomes who we actually are. The combination of the words fat and acceptance literally come to mean the action of understanding ones current weight to be adequate or suitable. But fat acceptance needs to be more than accepting an unhealthy standard of living, of which I do not support, and instead a vehicle for change.

When patients come to my practice for help losing weight, I have found that many begin their road to wellness by recounting to me how terrible and awful they feel that they have allowed their weight to get so out of hand. They have not accepted their bodies as a physical manifestation of the metabolic issues present combined with the choices that they make, but rather, they reject the image that stares back at them in the mirror. It is an image of shame, instead of an image of power.

The first step in helping my patients is to provide access the possibility of accepting their bodies as they are. When I share that my first request of them is to open their mind to the possibility of accepting their current weight as a temporary condition that can be changed, some shrug this request off as an impossible task. They visibly show that they have no faith left in themselves, and that they truly believe that they cannot change. Others even attest that they will gladly eat cardboard and chew nails in order to lose their excess weight. Others vow to starve themselves if that is what I ask of them. When I hear these comments, I cannot help but think that there is something very wrong with the way in which society places labels on overweight individuals. Our collective conversation is such that my patients relate to their body and weight not from an empowering context, but one of self-punishment and shame. They feel as though they have done something wrong, and that their punishment should be every bit as awful as their perceived crime.

Fat acceptance holds such promise for my patients, just as it does for anyone struggling to lose weight, because it allows them to rethink the very core of who they are. Must they remain the societal pariahs who are undeserving of a decent life that they envision themselves to be? Or is there a reality in which they can deal with their dysfunctional metabolism from a position of power? Those patients who cease to view themselves through a lens clouded by feelings about their weight are able to view the world from an entirely new and exciting perspective. They become more than just their weight, and are able to face their weight loss challenge from a place of power and confidence.

How to Change Your Conversation

Begin with the belief that you are far more as an individual than just your weight.

Beginning to shift your internal conversation from one of shame and self-loathing to one of power and possibility begins with the belief that you are far more than just your weight. People tend to identify most with the qualities that they believe stand out the most. This step requires that you begin to identify yourself based on the qualities that make you a person deserving of your own self-respect.

Answer the following questions: Who you are presently? Who you will become when you have powerfully dealt with your weight?

Think of more than just weight loss, but of how you live your life. Maybe today you are "limited by your mobility" but are creating a future of "activity and mobility." With this example, what does it look like when you are able to do the things that your lack of mobility has prevented? What new possibilities exist for you, and how is your experience of life different?

I have found that this is truly where my patients come alive. Unburdened by their past feelings of self and self-worth, they share with me a sense of freedom that they havent felt since long before they gained their weight. It is readily visible that these once resigned individuals are present to the possibility that they can take control of their weight loss, and regain their health and wellness.

Think of the action steps you will take to make the future you have envisioned for yourself a reality.

Outline each step that you will take in becoming a lighter, healthier you. An action step is not, a statement such as "lose weight." An action step is a specific action that you will take in order to reach your desired outcome. Examples of actions steps are things such as, "research a nearby gym," or "buy cute yoga crops." While these steps may seem small, they are manageable, something that your former commitment to, "lose 50 pounds ASAP," was not.

In my day to day work, I have found that fat acceptance is a crucial component to providing overweight individuals with the access, and even permission, to feel good about who they are. The journey to overcoming weight problems is one that requires travel down sometimes rocky roads, and fat shaming is counterproductive to the process. It is difficult enough to lose weight, and to make the lasting changes that allow weight loss to occur. A real possibility for change exists in the exercise of learning to accept yourself as a good and decent person who deserves the right to feel great about who you are. From this powerful context, I have found that my patients have been able to achieve phenomenal weight loss results. I can only hope that in sharing my thoughts on this matter that others will become present to the possibility that exists for themselves, as well, and make powerful declarations of who they are and who they will become.

Low fat tuna omelette


  • 1x full egg
  • 1x egg white
  • 1x small tin of tuna
  • 3x handful of spinach leaves
  • 6x mushrooms
  • 1x fresh chilli (or flakes)
  • 1x glove of garlic
  • Chopped chives to sprinkle on top
  • 250ml water
  • Pinch of pepper
METHOD:
Fry mushrooms in frypan, when they start to sizzle- add 100ml water (this allows them to soften quicker)
Once soft and cooked to eat, add spinach – once wilted, add water & tuna… Once heated and warm enough to eat, put aside.
Beat egg & whites in cup & add chilli & pepper
Pour egg mixture into HOT pan & spread until bottom & sides are covered… Cook until it bubbles through then flip!
Once flipped add other ingredients, plate & serve – and sprinkle with chives
(makes 2)
This is a great brunch/ filling lunch

How do you raise a daughter with a positive body image when you are terrified of making her fat

Parenting in a world that is in the midst of an obesity crisis, and worships thin, fit bodies is not easy.


We know that children in this country are dangerously overweight. Indeed, the statistics make for some pretty grim reading: there are 100,000 obese children in the country; another 300,000 are classed as overweight. A third of Irish seven-year-olds has a weight problem.
But this particular study - carried out in conjunction with Temple Street Childrens Hospital - reveals more. One 15-year-old being treated at the hospitals obesity clinic told researchers: "I dont go outside anymore."
Another 13-year-old was upset that her mum "found the food I was hiding". Then there is the eight-year-old who stated: "I hate my body - I need a diet".
Perhaps most heart-wrenching of all was the child aged just five, who said: "Nobody in my class will play with me."
These are words that no parent wants to hear. Being five is about running around; playing with friends and siblings; certainly about being care-free.
I cant be the only one to think that there is a particular parental worry that comes with being a mother to a daughter. There is the unique fear that your girl is perhaps getting too fat - because youre making her fat.
You tip-toe around the issue, worried that any mention of her weight will make her unreasonably paranoid. Countless studies highlight the particular impact a mothers attitude to food has on her daughters.
My little girl, Giulia, is now aged 18 months. She has some time left still, I hope, before I have to worry about her being fat or thin; about her - or me - becoming preoccupied about what shes eating and why. Giulia is healthy - she eats well and has a varied diet with plenty of fresh produce. But, like most parents, I suspect, Im still guilty of handing her a biscuit when Im tired, or giving in to her requests for another yogurt a little too easily.
Psychotherapist Harriet Parsons works with the eating disorders awareness group BodyWhys as services co-ordinator. She also lectures in the Dublin Business School and University College Dublin.
"We know that parents reward their children with treats - and we know that they withhold treats as punishment," Harriet explains. "Certainly, mums and dads shouldnt feel they need to avoid that pattern at all costs because we also know a certain amount of that is normal.
"What we do want to avoid, however, is making food a symbol of being a good or being a bad person."
She says for those that are concerned that their child is becoming overly focused on being thin, more than just diet needs to be examined. "Ask your child their opinion and how they feel - allow them to make decisions. Praise them as much as you can; get them involved in a sport or hobby. All these things do wonders for a young persons confidence, leaving them less vulnerable to developing an eating disorder." Harriet concludes: "Children are very good at picking up on comments about dieting and food made by their parents. They also watch these extreme weight-loss shows on television that are not only misrepresentative of real life, but they also reward getting thinner with materialistic things. We are recognise that its all just entertainment, but a child doesnt have that filter."
At my smallest, Ive squeezed into a size 8; at my biggest Ive been a size 14/16. When I was pregnant I was applauded for maintaining a slim physique. Afterwards, I was back in my old clothes almost immediately. All of this was applauded enthusiastically, with me admittedly basking in every compliment.
This summer, I was in an in-shape 10, but I know already, without having to step on the scales, that Ive now crept up to a size 12. Its hardly massive, but its begun to get me down. So in the eight weeks we have until Christmas, Im already planning a juice detox to kick off proceedings, followed by an alcohol-free November, as well as regular exercise sessions.
Not that any of this seems particularly out-of-the-ordinary. A lot of my friends find themselves in the same boat a few times a year: you diet down and allow the weight creep back up. Most of us have two or three different sizes in our wardrobes: "thin" clothes interspersed with "fat" items.
Its a vicious cycle that any mother - myself included - would love to shield their daughter from. But far from lamenting the pressures of advertising, popular culture and celebrities, I know that as my daughter gets older, I need to examine more closely my own actions. Research in 2009 demonstrated that mothers who diet are almost twice as likely to have daughters who suffer from an eating disorder.
There are plenty of celebrity stories that serve as cautionary tales on how a womans weight and body image is often associated, rightly or wrongly, with their mothers approval. Actress Portia de Rossi (41) has described how her weight plummeted to an astonishing 82lbs in the late 90s as she found fame on the television show, Ally McBeal.
Portia in her book Unbearable Lightness described how at the beginning of her career, her mother applauded weight-loss. Explaining how she lost 5lbs in five days on her "first diet", she says: "Thanks to my rigid self-discipline, I shifted the extra pounds. I was proud of myself, and my mother was proud of me, too."
She goes on to describe visiting her mother months later, when her weight had dropped to 95lbs.
"I wasnt getting the reaction I was hoping for from my mother. I wanted her to tell me that I looked great and that I had finally got it together after all the years of hell my weight had put us both through. Instead, she called me into her bedroom one morning and sobbed: Youre so thin, darling. If you dont eat something youre going to die!"
Actress Jamie Lee Curtis is the daughter of Hollywood royalty Janet Leigh and Tony Curtis. She has publicly spoken about her struggles with alcohol and painkillers, as well as the pressures of celebrity.
"My mother was incredibly proud that she returned to her 20-inch waist mere weeks after pregnancies," Jamie Lee has revealed. "She judged other actresses whose bodies grew and softened. I think she was afraid that it would happen to her too." But Jamie Lee (55) added that "by acknowledging my own changing body, I rebelled against my mothers fear of it".
One Kildare-based mother of three girls aged between six and 13 told Health & Living that she resolutely refuses to mention words such as "diet" or "detox" at home.
"I remember my mother doing an hour-long exercise video every single day, including Christmas Day and our birthdays," she explains. "From an early age, she taught me tricks like having a single bite of a dessert, or a single square of chocolate, rather than the whole thing."
And one incidence in particular stands out: "It was my Confirmation and I was horribly self-conscious standing beside her for photographs because I knew that she was slighter than I was. It was awful. And I do my utmost now to ensure that my daughters wont ever feel like that."
Suzanne Brett lives in Cork with her husband and their daughter, Olivia, whos 10: "Of course mums worry as their daughters approach their teenage years - as mine is now - that theyll go on some silly, unhealthy diet. Or worse; theyll become obsessed with food and losing weight," she states frankly.
She also bemoans the "yummy mummies" for whom six-days-a-week gym sessions and the latest faddy diet are standard.
"That sort of approach will undoubtedly have a negative impact on your children," she says, adding: "A big, calorie-infused dessert should neither be just a standard way to finish off every evening meal or an absolute no-go zone that comes with all sorts of guilty feelings. Balance and moderation is possible for adults - and as parents we need to teach that to our children. Its part and parcel of raising a healthy family."
Its a problem that is made even more difficult in the currrent childhood obesity crisis. In the last month, Safefood has launched its Lets Say No campaign, which aims to encourage parents to cut down on the amount of unhealthy snacks that a child has in between meals. Its a campaign being supported by Dr John Sharry, an author and the founding director of the Parents Plus Charity. His website solutiontalk.ie is also immensely popular with parents looking for advice and guidance.
"I always think that the focus should be on health and well-being rather than just weight - the family needs to approach issues together," Dr Sharry explains.
"Keeping biscuits and fizzy drinks just for the weekend is one solution - that strikes a balance between excess and deprivation."
Dr Sharry, who works with the Mater Hospital in the area of child and adolescent mental health services, is furthermore a senior lecturer at the School of Psychology in University College Dublin.
When I quiz him about the issue of anorexia, he says that although serious, eating disorders present themselves infrequently in comparison to the far more pressing matter of obesity.
"I can understand that parents - in particular mothers - might be worried about their daughters developing an unhealthy aversion to normal, healthy eating," he explains. "However, no health professional can deny the everyday truths that we witness: anorexia is extremely rare - obesity is not."

Vegan Fettucini Alfredo Tricolore Alfredo Without The Calories And Fat Perfect Valentines Dinner!

I hate to keep picking on Olive Garden, but did you know that a dinner serving of Fettucini Alfredo has 1,220 calories and 75 grams of fat, 47 grams of which are saturated? Throw in 1,350 mg of sodium and youve got a pretty unhealthy meal. Since I love traditional pasta dishes, last night I made a "healthy vegan" version of this classic.

Back in November, I posted a Vegan Mac and Cheese where I used butternut squash as the base of the cheese sauce. Its a great way to get the family to eat more veggies! The Alfredo sauce recipe is similar except the secret veggie in this sauce is cauliflower! 
Even if you are still transitioning from a vegetarian to a vegan diet and are still using cheese in dishes like mac and cheese or Alfredo sauce, start blending in these vegetables and use less cheese. Its healthier for you and your family and you can start to wean your pallet from fat. Remember, fat, salt and sugar are addictive, (especially when combined) and companies like McDonalds spend millions determining just the right combination to get you hooked. They call it your "bliss point". So weaning yourself from cheese can be tough, but simple and tasty vegan recipes like these can help you make the change to a healthier diet with less saturated fat and cholesterol!

Whole Foods carries fresh, whole grain, vegan, tricolore pasta. Im not sure if youll be able to find it but if you can, I highly recommend it. But be careful, it cooks in just a few minutes. If you cant find fresh pasta, just make the recipe with a half pound of dry, whole grain fettucini pasta or spaghetti. Or, better yet, make your own fresh pasta! As soon as I learn how to do that, Ill blog it!

I love my VitaMix blender. I cant imagine life without it (and Im not getting paid to say this!). This Alfredo sauce whips up in minutes in a high speed blender and the best thing about it is that after a few minutes, it actually starts heating the sauce. But if you dont have one, you can use a regular blender or a food processor. Youll just have to heat the sauce a bit before putting it on the pasta.
Blending the Alfredo sauce in a VitaMix blender
Vegan Fettucini Alfredo
[makes 4 servings]
1 teaspoon extra virgin olive oil
1/2 cup onion, diced, (half of a small onion)
3 cloves garlic, chopped
1 cup steamed cauliflower, fork tender
8 ounces silken tofu, (from the refrigerated counter, not boxed)
1 tablespoon vegan buttery spread, melted
2 tablespoons vegetarian formula nutritional yeast
1/2 teaspoon sea salt
1 tablespoon freshly squeezed lemon juice
1/4 cup fresh parsley, chopped, (optional)
8 ounces dry fettucini or 12 ounces fresh, cooked according to package directions


On medium low heat, in a small saucepan, sauté the onion in olive oil until soft, about 4 or 5 minutes.
Add garlic and cook another 2 minutes.
In a blender or food processor with an S blade, add cooked onion mixture, cooked cauliflower, silken tofu, buttery spread, nutritional yeast, salt and lemon juice. Process until smooth. Add a touch of soy milk if the sauce is too thick.
Heat sauce in a sauce pan or by blending for several minutes if you have a VitaMix.
Toss together with cooked pasta.
