Fish Taco Cabbage Bowl Low Carb Gluten Free Can Be Paleo

I have high standards about what recipes actually end up making an appearance on Kalyn's Kitchen, so if you see a recipe here you know I really enjoyed the dish.  And then in that growing collection of recipes I enjoyed, occasionally something pops up that's a complete wow!  These Fish Taco Cabbage Bowls were so delicious that when my nephew Jake and I tested the recipe, we both kept saying over and over how good they were. 

The Fish Taco Cabbage Bowls are definitely an offspring of the Sriracha Beef Cabbage Bowls I made last year, also a wow for me.  Obviously I love cabbage, so if you're not a cabbage fan this may not be for you. However, if you like fish tacos with slaw and spicy mayo dressing give this a try and I bet you'll love it just like I did for a quick and healthy dinner!

I seem to be on a little spaghetti squash binge at my house and if you haven't discovered the deliciousness of spaghetti squash yet, maybe this Spaghetti Squash Low-Carb Taco Bowl is going to be the recipe that gets you to try it!  I know some people think of spaghetti squash as mostly being a low-carb substitute for pasta, but personally I put it in a class all its own, and I've enjoyed it in casseroles, sauteed with vegetables, in a gratin with chard, and in a twice-baked casserole with pesto, to name just a few. 

The only hard thing about this recipe is cutting the raw squash apart before you season it and roast it.  Some people like to microwave the squash for a few minutes to make it softer, but I just hack away at it with a big knife.  I prefer roasting the squash for spaghetti squash bowls like this, because you can season the squash and the roasting process dries it out a little, but if you prefer you can cook the spaghetti squash in a slow cooker, cook it in the microwave, or cook it in a pressure cooker.

Chipotle and Black Eyed Pea Soup with Double Cilantro Vegetarian can easily be made vegan

A delightful and slightly spicy soup made with black-eyed peas.

(Today's choice for A Month of Daily Phase One Recipes is this unusual and delicious soup made from black-eyed peas, herbs, and a touch of spicy ground Chipotle pepper.  You'd have to limit yourself to a small serving of this for Phase One, since the soup is mostly beans, so enjoy it with something like Vegan Tomato Salad with Cucumbers, Avocado, Cilantro, and Lime on the side.)

Mention eating black-eyed peas, and most people think of Hopping John, the southern U.S. dish that combines black-eyed peas, ham, and collard greens. If I hadn't made Hopping John Soup a few years ago, and realized how much I like the taste of black-eyed peas, I might not have tried making this soup. That would have been just sad, because I absolutely loved this recipe, (which I did change a tiny bit, mostly to indulge my love for extra lime and cilantro.)

I started smoking when I was 12 years old. Smoking and Dexatrim™ became my diet of choice for many years. A dozen years ago, I had a desire to change my relationship to tobacco. I was a Sacred Pipe carrier and smoked a pack and a half of cigarettes a day. It seemed conflicted to me that I would use tobacco in prayer and ceremony, and then mindlessly abuse it throughout the day. I set a goal: July 4, 1997 would be my Day of Independence, freedom from smoking. Then, I came up with a plan to work toward my goal.

Success! Eleven years and counting, smoke free!

Of course, I put on 100 pounds in the meantime. Transferring one addiction for another is not freedom.

With the extra pounds, came a host of chronic physical symptoms – heartburn, headaches, edema, aches, pains, fatigue, depression, shortness of breath – and quite frankly, I was sick and tired of feeling sick and tired, all the time.

On the last summer solstice, I set an intention to change my relationship to food and regain my health and vitality. The goal, for me, wasnt so much about the number on the scale. I wanted to find freedom from mindless, compulsive eating. I wanted to begin living a healthier lifestyle that was more in alignment with my core beliefs. And I knew that having a PLAN was the key.

And so began my transition from highly refined and processed foods to a diet of primarily fresh, organic, plant-based foods.

First things first: planning my meals. This actually involves forethought and grocery shopping. Imagine that. And, it means ensuring that I have plenty of fresh fruits, vegetables, sprouts, seeds and nuts on hand. I also like to stock an assortment of fruit in the freezer, cut and ready to throw into the blender for delicious green smoothies.

Have mason jar, will travel

Ive learned from experience that when Im away from home and hunger strikes, its just too easy for me to make poor food choices. For years, my car was set to auto-pilot to the nearest drive-thru window. So now, if I know Im going to be out running around for more than several hours, Ill plan on taking a mason jar of green smoothie with me. Little bags of organic baby carrots,
crunchy sprouts, dried fruits, and nuts are great take-alongs too.

Can You Use Acupuncture For Weight Loss



Everyone is looking for the secret to weight loss, without falling victim to the latest gimmicks. With so many different opinions about how to lose weight, it can be difficult to tell what will really work.
Fortunately there is a technique for weight loss that has been tested for centuries:  acupuncture.
This technique is safe, sound and reliable. And, even more exciting, using acupuncture for weight loss helps you lose weight in several different ways.


Is There Proof That Acupuncture Helps With Weight Loss?

Yes. In one study by Professor Sabina Lim, at the East-West Medical Research Institute at Kyung Hee University in Seoul, South Korea, researchers found that auricular acupuncture (acupuncture which uses the ear points) resulted in about a 6% reduction in body mass index (BMI) over 8 weeks. This is especially interesting because they found this same result with two different protocols, one with four needles and one with only one needle. Both techniques resulted in lower BMI.
Researchers continue to study the effectiveness of acupuncture for weight loss, but the results look promising.


How Does Acupuncture Help With Weight Loss?

There are three primary ways that acupuncture can help with weight loss.
First of all, acupuncture helps balance hormones. Acupuncture can increase endorphins, which reduce cravings and generally make you feel more positive. This can help reduce binge eating.
It also decreases the hormones that contribute to weight gain. Dr. Burak Bahar and his team at the Ankara Physical Medicine and Rehabilitation Training and Research Hospital in Ankara, Turkey found that both leptin and insulin levels dropped with acupuncture. Leptin regulates fat storage and metabolism and stimulates the feeling of being full.  Insulin regulates carbohydrate and fat metabolism and the absorption of glucose from the blood. This finding suggests that acupuncture may actually reduce the hormones that lead to overeating.
But if leptin stimulates the feeling of being full, why is it good to have reduced levels? Like insulin-resistance, cells can become immune to the effects of leptin when the levels are too high. Many obese people have excessively high levels of leptin. When your leptin level is high, you can no longer tell when to stop eating. Restoring balance to leptin levels may help to reduce leptin-resistance, making it easier to stop eating before you overeat.
The third way that acupuncture helps with weight loss is by reducing stress. Cortisol, the stress hormone, can affect weight in several ways. It disrupts digestion, contributes to depression and escalates your “fight or flight” response. If you feel overwhelmed, you are more likely to binge for emotional reasons and to assume you have no time to prepare healthy meals.
And finally, acupuncture can aid digestion. According to Traditional Chinese Medicine (TCM), the spleen is responsible for digestion. Disharmony and imbalance in the spleen can lead to fatigue, slow metabolism, water retention, loose stools, and a feeling of heaviness. The liver is responsible for the flow of Qi, blood and emotions. Disharmony in your liver can lead to cravings and compulsive eating.
By balancing your organ system, you support weight loss both physically and psychologically.


How Can I Regulate My Metabolism At Home?

Of course, good metabolism relies on all the things you know are good for you—exercise, good nutrition, sleep and reduced stress. But there is one easy thing you can do using TCM principles to regulate your metabolism: ear massage.
There are several acupuncture points on your ears that help reduce cravings. To stimulate these points, massage your ear several times a day. Start by rubbing your upper ear. Grab your ear with your thumb on the upper, inner ear and your index finger behind your ear. Rub in circular motions for 15 seconds. Next, use your index finger to rub the inner crevices of your upper ear. Rub the front of your ear where it attaches to your head. And finally, massage your ear lobes by gently pulling on them and rubbing them in circles for 15 seconds.

How losing weight can be hard on a marriage

When someone loses massive weight, it’s ‘life-changing,’ often causing friction with their partner. There’s even a word for the phenomenon: bariatric divorce.


For Jim Crosby, at 370 pounds, there was no epiphany, no “aha!” moment. He heard the weight loss ad on the radio, as he had so often before, and just thought: “It’s time.”
He registered that day, plunking down $4,000 for a year’s membership plus personal coaching. Then he went home and told his wife.
What followed would tip the scales of their marriage, testing its mettle.
She was furious he spent so much money without discussing it. He had a history of yo-yo dieting and not following through on commitments. “I thought, oh my God, here we go again,” says Lorraine Charland, 50.
Then, as he dropped 170 pounds over 15 months, she watched her shy, couch potato husband transform into an extrovert and fitness fiend. He took up ultimate Frisbee, whitewater rafting, even sky-diving. He attracted the attentions of flirtatious women.
“I’m not going to candy-coat it. We fight. We argue,” explains Charland. “He’s on a quest and it’s really hard for me to keep up.”
He was angry at her for always being mad at him. “I felt she was trying to hold me back,” says Crosby, 54.
While many marriages flourish when a spouse sheds weight, others can flounder. “Massive weight loss, and maintaining it, is life-changing,” says Dr. Valerie Taylor, the mental health chair of the Canadian Obesity Network. “Suddenly couples can find they don’t have as much in common.”
In blogs and websites, the term “bariatric divorce” is bandied about, meaning a failed marriage after weight-loss surgery. But obesity experts don’t yet know how common that might be. “I wouldn’t say it’s the norm or majority of cases,” says Dr. Sanjeev Sockalingam, director of the bariatric surgery psychosocial program at Toronto Western Hospital.
Researchers are currently investigating the marriage repercussions, since emotional support is crucial to a patient’s success. At Toronto Western, social workers are interviewing spouses about marital issues that emerged. And at St. Joseph’s Healthcare in Hamilton, a study of 250 bariatric surgery patients is looking at long-term effects, including what happened to patients’ relationships.
“People are concerned and ask before a partner’s surgery, ‘Should I worry my spouse will leave me?’” says Taylor, head of St. Joseph’s bariatric surgery psychiatry program. “We don’t have a lot of good data for them.”
She suspects the clue lies in the quality of the marriage pre-weight reduction. “I don’t think massive weight loss creates serious problems in a healthy marriage,” says the psychiatrist. “But it can cause difficulties in a relationship that’s already strained. It could precipitate the beginning of the end.”
Before Crosby’s extreme weight loss, he and Charland had been working to improve their relationship frayed from difficult years raising their daughter and autistic son. The boy was finally starting to flourish, and Crosby was more available on the home front. He’d switched to a new job as a project manager for a nearby company, so he was no longer commuting four hours each day.
During their stressful years, the Oshawa couple packed on pounds. “We’re both emotional eaters,” says Charland, who hit 300 pounds at one point. “I wouldn’t eat for six hours, then I’d binge on garbage,” recalls Crosby, who reached 400 at his largest.
Then in April 2012, he impulsively joined Harvey Brooker Weight Loss for Men. “Lorraine thought, ‘How dare you, without consulting me,’ but I knew if I didn’t do it right then, I never would,” he explains.
He cleared out the house of junk food. She brought more in. “I was so angry,” Charland explains. “We were trying to work things out together and here he goes off on his own.”
At a session for spouses offered by the Harvey Brooker program, she watched as one wife berated her obese husband, humiliating him in front of everyone. “It made me look at myself: Am I that bad?” recalls Charland. “That was a huge turning point.”
Following her husband’s lead, Charland started eating simple, healthy meals. But her weight loss has been slower. In a year she shed 50 pounds. Diagnosed with a genetic heart defect, she has not been able to exercise much, she says. She had a pacemaker implanted last year and went through cardiac rehabilitation.
Meanwhile, slimmed-down Crosby has been working out at a fitness club nearly every day and greedily grabbing at new experiences. He belly danced for a charity fundraiser. He went skydiving. That one stunned Charland. “Here I am with a pacemaker and two kids and he wants to jump out of a plane.”
“I was having so much fun. I felt like I was 30 again,” says the husband. “I was like a kid in a candy shop.”
Of the duo, Crosby had always been the introvert, and Charland the outgoing one. “My personality was morphing into hers,” he says.
“The man I married was reserved, and I was the centre of the world,” laughs Charland.
As a marriage and family therapist, Shyamala Kiru sees similar couples who struggle after one partner loses weight. It’s not always the main issue that brings them in, but it comes up during therapy — the conflicts over time, the insecurities the other spouse feels.
“Weight loss isn’t just physical,” says the Markham therapist. “So much of it is mental, the boost in self-esteem and confidence. When you feel different about yourself, you make different choices.”
That newfound confidence can be reflected in the bedroom. One wife who lost 80 pounds started buying lingerie and initiating sex. Her husband, says Kiru, enjoyed her enlivened sexuality but also felt intimidated. “It was like being with a different woman. He’d always been the initiator, the pursuer. Their roles shifted.”
The wife had also become fanatic about her fitness regimen, to the exclusion of spending time with him. In therapy, says Kiru, he was pleased when his wife invited him to work out with her.
“What’s fascinating as a therapist is that when couples marry, they never know where it’ll end up. People change,” says Kiru. “It’s how you navigate the changes together.”
That’s where Crosby and Charland stand now, trying to navigate together.
They talked about the attention he was getting from other women. He assured his wife that while it was flattering, it meant nothing to him.
“In all my pushing the envelope,” says Crosby, “I completely missed one central fact: Lorraine felt left out.”
The couple now shares more activities, such as guitar lessons. Their first duet will take place at a recital next month. She has joined his fitness club and he’s promised to help her get started.
“For all the anger along the way, I’m also very proud of him. You have to be, dammit,” Charland laughs, rolling her eyes.
“The reward,” says her now healthy husband, “you get me for another 30 years.”

Harvesting my Peppers
Its been really warm for October here in Northern California and my peppers love it! Im still harvesting pardrons and my bell peppers are finally turning red and orange. My two little jalapeño plants have quite a few peppers on them too even though Ive been picking them off all summer. Since Im headed out of town with my daughter this weekend to soak up some Vortex energy in the red rocks of Sedona, I decided to harvest the rest of my jalapeños before I leave. (Even if you dont have jalapeños in your garden, its a great time to buy some at the farmers market!)


My two little plants still had over a pound of jalapeños.

Two years ago I dehydrated my jalapeños and used them in chili, curry, and anything else that I wanted to spice up. 

But this year I thought Id pickle them. Heres what I did.

Pickled Jalapeño Slices
[makes 5 half-pint jars]

1 1/4 pounds jalapeños
2 cups filtered water
2 cups while distilled vinegar
2 tablespoons sugar
2 tablespoons pickling salt*
1/4 teaspoon dried oregano
1 tablespoon black or rainbow peppercorns
10 small cloves garlic

* You can use any salt as long as its not iodized and doesnt have anti-caking agents. To determine how much you will need, see the Morton Salt Conversion Chart.

Clean your jars and 2-piece non-reactive lids with hot soapy water. If you are going to keep these in the refrigerator, this will be sufficient. If you are going to can the jalapeños in a hot water bath, follow the instructions from the National Center for Home Food Preservation.

Wash your jalapeños. Wearing rubber gloves, cut them into 3/8 inch slices. Set them aside.



Bring the water, vinegar, sugar, salt and oregano to a boil, stirring until the sugar and salt completely dissolve.

Meanwhile, divide up the garlic and peppercorns into the 5 half-pint jars.

Place 2 cloves of garlic and 1/5 of the peppercorns in each jar.

When the vinegar solution comes to a boil, stir in the sliced jalapeños and turn off the heat. Make sure each slice is submerged. If you are not going to can them, let them sit in the hot water for 5 to 10 minutes. If you are going to can them, dont do this since they will already be getting heated again for 10 minutes.

Divide the jalapeño slices among the 5 jars using a funnel.Then fill each jar with the vinegar solution up to 1/4 inch to the top of the jar.

Fill the jars with sliced jalapeños and liquid.


At this point, you can screw the non-reactive lids on the jars, let them cool and pop them into the refrigerator until needed. They will last for months if unopened.

If you would like to can them, screw the two-piece non reactive tops on until secure but not too tight. Place them in a hot water bath for 10 minutes. Remove, let cool on a rack and make sure each top seals and "pops". Then tighten the rims a bit more.

Make sure the jars are covered with at least 1 or 2 inches of water.

Let the pickles rest for 5 days to a week before eating. Then enjoy!
